My mornings are always a little chaotic. My newborn usually wakes up first, initiating a screaming alarm clock that undoubtedly wakes up my 2 and 4 year olds and sends them scampering down the hall. My husband somehow remains oblivious to it all.
After carving a path to the kitchen to get my coffee brewing, it's go time: diapers are changed, pajamas are replaced with clothes (or in the case of my 2 year old, today’s costume), snacks and lunches are packed, and breakfast is served.
The kids are easy; all they ever want are Cheerios and bananas. As much as I love a classic bowl of cereal, I need something more nourishing to get me through my busy mornings. My mother-in-law gave me her Muesli recipe and it’s been a staple for me ever since.
The recipe is pretty simple and can be prepped ahead so it’s ready to go whenever you need an easy breakfast. It’s full of nutritious goodness: oats, protein, seeds, and fruit. I scoop it into my bowl, add milk and then top it with fresh berries or bananas.
Mommee Muesli Recipe
- 1 cup rolled oats (gluten free if needed)
- ½ cup of the following:
- dried apricots
- raw cashews, or mixed nuts
- sliced almonds
- raw pumpkin seeds
- sunflower seeds
- handful of chia seeds
- handful of sesame seeds
Optional: soak the oats overnight in milk (or milk substitute) in your fridge, or in the morning when you first wake up to soften up the oats.
