When launching Mommee Coffee, it was important to both Emilie and I that we offer our coffee in a variety of caffeination levels. It was also very important to us that we did NOT employ a decaffeination process involving harsh chemicals (read more about the differences between decaffeination processes here).
Mommee Coffeee utilizes Water Processing to decaffeinate our coffee. When people see this on our bags' labels they often ask us: (1) what is water processing (please read here to find out); and, (2) what is the difference between "Water Processing" and "Swiss Water Processing."
The Swiss Water Decaffeination Process is a patented process for decaffeination. It is just one company doing one type of water process decaffeination. In the Swiss process, the beans are polished as a final step which makes for dark beans.
The beans from the Swiss Water decaffeination process don't work as well with our proprietary air roasting process. Instead, we employ a "Mountain Water Decaffeination Process." The Mountain Water Decaffeination Process is organic and chemical-free like Swiss Water however it leaves out the polishing step.
